I've done two of these for people now. It's an absolute nightmare if you've got a complex tree of mail folders or thousands of old mails.
This is where Mail shows just how buggy and flaky it is. Truly incredible for release software.
The trick is to do only about 10 folders at a time. If you have any mail folders with "/" in them, like "2002/3" for example, replace that character with something else or Mail thinks it's a subfolder and crashes. It crashes a lot basically.
I transferred entourage mail to mail on my work iBook, iMac and my mom's iMac and it went beautifully.
Harald is correct that if you have a lot of mail storage folders with folders in them that it would take you awhile to redo these. I had to do some of this myself for work.
However, I doubt your mom has this kind of complexity. (My mom reads mail and throws it away or just lets it build up in her inbox! To each their own.)
This version of mail is very much improved from version 1. It works great for me at work. My mom has found it to be much easier to understand than Entourage on her iMac. Much less clutter and easier to understand, larger icons, etc.
Try it. If you still have some beefs, send your constructive suggestions to Apple. We all may benefit.
Forgot. Open entourage address book. Highlight (Select All)your contact list.
Drag these to a folder you create on your desktop. Your contacts will now be Vcards. Address Book imports Vcard contacts. They are not in Mail. (Never were, actually.)
You will also find the new Address Book to be miles ahead of the old version. My mom is busy adding to and fixing hers.
The nice guys over at Macsonly have been putting Jaguar through its paces, releasing their findings bit by bit,and today they were discussing Mail and importing from Entourage, with some real life issues, etc. They had like 15,000 old messages to move!

Just goes to show, I should do less reading around here and more trying things myself. It's a good thing I didn't get to that feedback page yet.
Sorry.
I'll try it in a few.

Thanks for the info. Wish I would have known about the script. Would have saved me some time.
Why is there no wizard for importing other clients' email, in Mail.app?

There is one.
File --> Import
