Does the time to process vary greatly? I've watched videos that were downloaded an hour earlier &
there are other videos that I can't watch that have been uploaded 24+ hours earlier.

It does actually. Not that I saw delays longer than 24 h, yet it happened not once, that I had to wait overnight for a video to become viewable. Sometimes it takes just minutes though.
My hypothesis may not necessarily be true, but your screenshot suggests that right away. Frankly I never faced issues like that on iPhone.
