Recently there was a report that many apps are installed and then go out of use. There also was something about most users buying around five apps.
What apps do you have installed that you use regularly (say, several times a week)? Yeah, list the Apple-shipped ones, too.

SMS Text (I'm like a teenage girl in high school with this crap, I need to quit.)

Weather Channel App (But I use the AccuWeather app for the motion Radar)
Blues App for St.Louis Blues Hockey game listings
The Hockey News
IM+ (Chat app I just bought, replacing Palringo)
Also I use a few apps from jailbreaking my iPhone:
Cycorder (Video Recording App...which is the reason i jailbroke my iPhone, Apple should have included or added this feature.)
Categories (Puts apps into folders to keep it organized. No more 6 pages of apps to scroll through, if I want a game, I just go into the games folder. Very nice.)
