I recently opened Photoshop, After Effects, Bridge, Excel, Word and others to test how fast OS X opens multiple apps with 4GB of ram. After closing all the apps it still saying that its using 86% of my ram. What is going on and how can I stop from absorbing my entire 4gb of ram?

That's normal. When that RAM needs to be used for something else *THEN* it gets purged. Not before. If you quit all those apps, then launched them again, it would just reuse the data already paged into memory.
