The Official Recurring "What Apps Do YOU Use" Thread
Well, I know these keep coming back, but I haven't seen one in quite a while, and with all the new applications coming out lately I thought it might be a good time to repopulate the list. Who knows, maybe this one will actually get that sticky we've all been waiting for.
The goal is to put up the best, most eloquently designed applications you use on a daily basis. Be they freeware games or full fledged production suites. As always, try not to post an app that someone else already has. Let's keep the thread clean.
Adium - Currently the best and most popular IM client for OS X. Supports most major IM services. (AIM, MSN, Yahoo, Google Talk, MyspaceIM, etc...) Video Chat support coming soon.
Quicksilver - I'm not sure how exactly to describe this. It can be used as an app launcher, but it's so much more. Give it a try.
Growl - System notification alerts. This will alert you with an onscreen pop-up when you've been IM'd, when iTunes changes a track, and when you get new mail. Very handy to have.
iScrobbler - A toned down, not-so-bloated version of the Last.FM program. Last.FM is a website where all the music you listen to can be uploaded, tracked, and have music recommended to you.
Celestia - Realistic 3D model of currently charted space. 3D accelerated graphics card required.
VLC - Currently the best video player on OS X. Supports all the video formats that Quicktime Player doesn't.
Handbrake - Freeware DVD ripper. Finally you can just keep all your movies on your hard drive.
Textmate - Free text and coding alternative to BBEdit.
iStat Pro - Dashboard widget that tracks your computer's temps, processes, and uptimes.

Oh, you ubergeek you. One Finger Snap can still help you. Wouldn't it be nice to have just one more button? Turn on One Finger Snap, and you no longer need that right mouse button for the contextual menu. Now you can reassign it to something more useful (like sshing your web browser, or opening AppKiDo, or reading
joyoftech).

WindowDragon was created because it is often inconvenient to click on a window's title bar or resize button to move and resize windows. MONOLINGUAL DISCLAIMER: Be very careful using this program!
it does it's job almost too well sometimes. It removes the portion of universal binaries that your computer doesn't use... or at least it thinks it doesn't use. For programs that use Rosetta (Ex. All Microsoft Office applications), this completely messes everything up and can't be fixed without a deal of trouble. I used this program and ended up having to reinstall my OS from scratch... no archive and install. I had no external drive at that time as I was a poor college student (still am, but ya know), and it was a pain to find one to backup all my precious data. It is a good program that can save you precious space, but use it carefully!
I also prefer Perian for media playback over VLC, because it allows you to watch a DivX file in Front Row.
Skype is my favorite IM and beats Adium in "OS-X-ness".
