Macast. It's OS9 only, and only plays Mp3s, not encoding, burning, etc. But it is hands down the most eye-candy, easy to use Mp3 player on any platform. It's stable, and uses little CPU.

here's a few shareware and freeware apps i can wholeheartedly recommend:

    1) watson - unique, useful, and getting better with each tool they add

    2) inotepad - a terrific note app with lots of cool features. notes can be locked or encrypted. reminders can be set for events related to notes. navigation and searching are easy and intuitive

    3) pandocalendar - really nice floating freeware calendar with notation

    4) pacifist - extract stuff from .pkg files. very handy when you want to reinstall IE 5.1 and don't want to reload OSX to do it.

    5) macjanitor - an easy way to access the built-in crontab maintenance routines of OSX

    6) brickhouse - a great way to activate OSX's built-in firewall

Well, I'm not sure if these are all shareware, but they're my favs:

LaunchBar: completely transparent way to navigate and work the computer without a mouse. Use it if you want, forget it if you don't. It's great.

OmniGraffle: This program saved my ass in my structural equation modeling class. Not because it does SEM for you (it doesn't) but it makes models so easy to make, even a procrastinator like myself could come up with a GREAT looking model in no time flat. Plus I can export to PDF and others can see my work.

OmniOutliner: makes taking notes or jotting down ideas a breeze. Super slick app. Could use a little more functionality, but it's great.

MacReporter, a great dockling that lets you glance at the headlines of a multitude of sites, and then click individual stories to read them.

Oh, and Watson is amazing. Everyone I show it to is blown away.

Chalk up another vote for <a href="http://www.obdev.at/products/launchbar/index.html"; target="_blank">LaunchBar</a>. I'm great at remembering the names of my files, but hopeless at remembering where they are. This app Saved My Life?.

Also, I have to handle a lot (a lot) of text from various sources, and <a href="http://www.unmarked.com/products.html"; target="_blank">textSOAP</a> is fantastic for getting it nice and clean.
