You just sync your phone. It creates a backup of your apps, contacts, sms etc.
I personally wish this process was more obvious. For example, it would be nice if there was a menu option that said backup my iphone and it asked you for a save location and then you picked where it went. Then to restore it, you'd select the folder manually.
It's hard to know if you have actually got a proper backup by just relying on itunes. There is a backups list in the system prefs > devices > backups. If it's dated recently, you should be ok to get rid of your phone.
It might be a bit early to sell right now though. I don't expect the new one until mid-June at the earliest. It was mid-July last time. The beginning of next month should be plenty time to get a good deal on it.
