Have you used Win7 RC1 or the beta? There's nothing rushed there.
Microsoft has a... complex... history with announced release dates. But even if they do ship in November it doesn't matter that Apple hasn't announced yet.
Windows 7 is stable because it is a evolutionary upgrade to Vista. I like what they did with WDM memory management. I can't imagine why they let the stupid implementation in Vista slip past alpha testing.

Snow leopard is a rewrite of sorts. Anyway, I do hope Apple ships a complete release instead of one that will require an upgrade a year down the road.
