I wonder how the smart cover magnets affect the internal compass?
I have a cover for my iPad which uses magnets as a catch and it means I have to take it out of the cover to use the compass

It's a digital compass, anyway, so it shouldn't matter at all.

Huh? It is still a magnetic compass right?
My assumption is that it is dynamically calibrated.

I suspect Apple tastes all of their innovations, the better to savor them. Not sure I want to know why you're tasting your iPad, however.

Compass uses gps signals not magnetic poles. Magnets won't affect it.

Do you have evidence of this?
Apple's documentation suggests otherwise.

Besides that, some iOS devices without gps still have compass functionality.
I'm sticking with the assertion that calibration compensates for those magnets.
