    You... tell it what media you want on it and it syncs.

    Will it know that this is a new piece of hardware? And what about the G3 service, will I be able to just turn off the old iPad account?

    There's no "new hardware", there's no "turn off".

    Every single thing Apple makes has its own serial number. You can sync an infinite number of devices to one iTunes account on a computer. Infinite. It doesn't matter.

    You can only sync one iTunes account to a device at a time, however.

    So diagramically,

    iTunes content ---> iPod x ∞, iPod mini x ∞, iPod nano x ∞, iPod shuffle x ∞, iPod touch x ∞, iPad x ∞, iPhone x ∞

    iDevice---> iTunes content from 1x account

    3G you can just pop out your SIM and move it to the new iPad. Or if you no longer want service at all, yes, just cancel it or let the month run out.
