Seeking advice: Car Bluetooth issues.

I’m driving a 2015 Chevrolet Equinox and a 2012 Volvo S60 and both have the same issues when I connect them with my IPhone X:
When I turn up or down the car volume it triggers my iPhone to play my Apple Music library (even though I use Spotify). Usually the same damn song every time.
And sometimes even after my car navigation software is finished speaking a sentence (e.g “go left”), the music starts playing again even when I specifically paused it. As if the software tells “okay the voice stopped, music can now continue” without keeping in mind if the music was playing or not to begin with.
Its extremely annoying. Anyone experience with this?

Ofcourse this is not a real solution for people who use Apple Music. The only reason it works for me is because I use Spotify as streaming service.
