So Apple (an American company), wants to buy Shazam (a British company), and the EU investigates because Austria, France, Iceland, Italy, Norway, Spain, and Sweden object!

Could it be that both Apple and Shazam operate in all those countries as well? If those countries have a concern then a complaint to the EU is correct, so they investigate and see if there are any issues. It's no wonder the UK voted to leave when they show such a profound lack of understanding of what and how the EU operates.
Shazam does not operate in those country, they only make an app that runs on your phone, unless the EU claims running on someone's phone who lives in their country as operating in their country. Not sure what authority they may have.

Apple bought Isreali company, Anobit, for their flash memory IP. The tech in FaceID is also from an Isreali company, PrimeSense, which I think everyone here knows by name.

The EU has announced an investigation due to requests from various countries. It is doing its job.
I can't see how that is any different to any other trading bloc/country.
Now, we have to sit back and wait for the results of the investigation.

I think if Apple has operations in an EU country, ie an Apple Store, it would be considered tax-resident for other Apple services as well. A couple years ago Apple used the "oh, we operate from Ireland" argument to dodge Italian taxes which didn't work out well for them.
