Since New York State won’t let you use Apple Wallet for your ID, I still need to carry my physical wallet around, so not having Apple Pay at any particular store or chain is no big deal for me. That said, just about everywhere I go accepts Apple Pay now.
I simply don’t carry a wallet any more.
My iPhone is with me all the time and a 3 card magnetic sleeve holds my driver’s license, my Medicare card (Quebec), and my Costco Master card.
No cash needed for day to day living and definitely no need for bulky wallets.
P.S. Our Walmarts all have tap to pay terminals and by definition Apple Pay.

I have an Apple Wallet attached to my phone with my DL and my physical Apple Card for locations don't accept tap-to-pay. Prefer the Apple Card here because it doesn't show a visible card number that can be written down or photographed.
So, I’ve never been inside a Walmart store and never will…. And the same applies to Dollar General there are some places that just make you feel dirty.
In Australia, ApplePay works everywhere both at the shop and at the computer and phone and has been accepted for a long time.Our banks fought hard to force their customers onto their in_house payment apps. But they eventually came to their senses. Just like our banks wanting to get your personal shopping information, Walmart is attempting the same.
