The Dock also has routines to scale windows, does hiding and showing of Apps and so forth. If you don't like the Dock, just hide it.
Mapping shortcuts and using variuos menu-apps like Fruit Menu makes no sense since that won't give you functionality like Drag'n'Drop. I love the Dock. Since it's mad eme many times faster that all helver apps in OS9 ever did, I cannot understand the love for such apps like Fruit menu.
Like it or not, the Dock is a vital part of the OS. If you're not using the Dock, you might as well not be using OS X. It's like saying you don't like the Windows taskbar. Without the taskbar, Windows is nothing.
I also use function keys, but I don't mind the dock. It's very useful for certain things (like watching CPU usage with CPU Monitor). If you don't like it, why don't you shrink it down real tiny?
