Reguarding the mouse i would go with the Logitech. You would be used to having 4 buttons, scroll wheel etc. Also with the extra buttons i have assigned then in EXPOSE so that you can use all its neat tricks in managing your applications / windows (bad word) etc.
But yeah, go with the MX700, all the assignable buttons will make life easier. Once you've useda scroll mouse and go to an apple pro mouse you'll find yourself stroking it accidently trying to scroll.
There is no easy answer to that question. Yes because it just plain sucks and no because I can delete it very easily.
I think that we'd find that people who like using IE for Windows also like using Windows as a whole and that people who hate using IE for Windows are looking for something better. Just a hypothesis...
I have the thumb buttons set to expose, the switch application button to, well, switch applications. The scroll buttons and wheel all work they way they should. Keep that mouse, its a good one and it works great with OS X.
Widgets. Some people find them really handy, If you are fluent in java then you will have no problem writing your own. They can be quite powerful. I suggest you check out konfabulator.com. You can check out some prebuilt widgets or check out the syntax to make your own. Its all XML and Java.
In my experience with widgets, which basically consisted of rubbing it in my PC using roommates face, Konfabulator was far better than anything we could find on the PC side. That was a couple of months ago mind you. I am sure if there is better software out there some one on here will jump at the first chance to prove me wrong.
I think you will be happy with safari, It handles plugins just fine and renders pretty fast.

Also I suggest bookmarking this forum, but make sure you use hte search button and save Brad the obligatory "there is a search button for a reason" speech.
For customizing tools: There is plenty of them, though, I also advicate using the Mac "stock" for a while. When you are ready to dip into customizing you could take a peak at this forum (MacNN GUI customizing forum) and Resexcellence.

Are you sure? K's info page says JavaScript. JavaScript == ECMAScript != Java. It's not even a close comparison. JavaScript was named such simply because of the Java-is-cool bandwagon in the mid 90s. Besides the name, the two have little in common.
