How do I change the icons located in the dock at startup?

I have no use for IChat and GarageBand, and QuickTime, my Address, and Mail are used infrequently or at a date still be to determined.

i'd think you would just click and hold the ones you don't need and drag them off the dock

Yup, just drag them off. The only ones you can't get rid of are the Finder and the trash.

In the "Support" tab of Apple's web site (http://www.apple.com), you can find the drop-down menu for whichever version of Mac OS X that you have. You'll find all sorts of tips and instructions on how to make your user environment a lot more to your liking.

you can get rid of the finder with a hack, like transparent dock or something...sorry, not trying to confuse, just saying that it's possible
