New iPod... what am I doing wrong?

I received a new 40GB iPod last week as a birthday present (yay 30... actually, boo.) I've had the hardest time getting it to work properly, though. I finally got it to sync with iTunes and loaded songs on it, but it's very rare for the iPod to 1) mount on the desktop at all and 2) show up in iTunes. I've done soft resets, hard resets, I've wiped the drive and reinstalled everything. I've used Disk Utility to verify and repair permissions on both my Mac and the iPod. iPod updater says it's running the latest version of the iPod OS (miraculously I was able to install that, I guess.)

Am I doing something wrong or out of order? Why won't the thing mount?

    10.3.4.

There are lots of people with my problem, apparently. I checked the discussions in the support section of Apple's web site.

This is frustrating... the thing keeps freezing on "Do not Disconnect" and iTunes usually hangs on startup.

(Edit: Works like a champ if I don't use the iPod dock. Just figured that out.)
