Hey cool. I didn't get to check out that part of the state when I was in Boston for a week back in 2001 (a month after 9/11, I was determined to have my holiday from San Fran no matter what, I had planned it for a while..!!)
On my iBook G4 all the app/utilities that come with OS X (Mail, Chess, Address Book, Grab, etc.) are still not Universal so I expect them to be in Leopard. Even though it could be a matter of simply checking 'Intel' and recompiling to make them Universal, Apple might take this opportunity to remove any Carbon code in those apps and/or improve upon what is already there.
Whatever Apple does, I hope they improve Address Book. I do not like the way all the information is in one window. Some improvements to Address Book I would like to see are:
1 - separate information in tabs that we can create and name.
2 - improve how people are added to/removed from groups. Since a person can have multiple cards/tabs you can select which one is associated with that group.
3 - import images (i.e. business card) into a person's entry. This might already be possible but I have never done it.
4 - better integration with iCal.
I have heard talk of merging iCal and Address Book but with clever enhancements to both they can remain separate but have better integration.

All the Apple apps (inc. the ones you mentioned) that Apple bundles with Intel macs are Universal.
