You need the Pro version to make major changes, but text editing in Acrobat is on a line by line situation. Text doesnt "flow". For major PDF work, get Enfocus' Pitstop Pro! It is a lot better for power-user text edits in PDFs.

Server allows unlimited AFP connections. OS X Client is limited to 10 or less I think. Server also has "Watch dog" daemons monitoring critical services so that they can be restarted in the even they die.
