As always, this comes right when USB C/USB 3.1 is settling, it wasn't till this year most supported USB 3.1 speed?

Analysts suspect Apple will offer OLED 'iPhone 8' for less than $1,000, cite market forces...
It is to my understanding that the $1000 price is for the 256 gb model and might be the exclusive model, but if they have an $850 version it might be for an 64gb model?, alongside the same 32/128/256 gb capacity for the 7S as last year.

This is no surprise, Even if they don't remove the 3.5 mm port, there will likely be an Bluetooth ear pods design. Apple has been pushing toward a Bluetooth switch into headphones at some point. That is not surprising with now every apple device supporting Bluetooth.
