I've never understood why you couldn't config and order any machine you wanted at the store.
You can. When I bought my Mac Pro Apple was running an online memory upgrade special. The store honored it and it took an extra 20 minutes for them to install it, but other than that it was no big deal. If they didn't have the config I wanted they would have ordered it and I could have came back to pick it up or I could have had it shipped to my house.
Another nice thing about having an Apple store - you can pay by cash or check if you want to. Sure, most people have no problem with credit cards, but it's a nice option for those who want it.
