What I want most is the ability to paste plain text into notes. Often times clipboard text includes hyperlinks, bold, large fonts, etc and I don't want all that. Is this something the new notes can do?
This is a step in the right direction. I've dragged .jpegs and .pdfs into Notes for quite a while. Synching between iPhone and mac with no Evernote fussiness is a killer feature.
I wonder if Apple could do a full fledged sketchpad app. I use the Grab utility for screenshots along with and Preview to markup pdfs, currently. however, Grab only saves as .tiff and many third party apps do not support that format. So, I need to convert to .pdf...sigh!
Notes Plus is an excellent sketch and note taking app for iOS. Apple should buy them and incorporate the tech into Notes. My wife recently started using Notes Plus on her iPad at work and it has saved her a lot of time. She finds the conversion of handwriting to text very useful. Also the PDF markup.
BTW they are having a 50% off sale on October 2 - 24 hours only.
Great to see Notes evolving. Ad handwriting recognition and I'll buy the silly pen thing. And to those who say it won't work and you can type faster, I've tried handwriting recognition on a PC and it works plenty well for my needs. It's the PC-ness of the PC which sucks. Never learned how to touch type, so for me note taking is a pen on paper process.
Nice update except for one thing, no variable text size. I love notes, but when I pull out my phone at the gym to see how much weight for each machine I have to pull out my glasses to read it. Tried bolding, but that's not enough. Could try Headers I guess, but that seems awkward. Tried the universal text slider in Accessibility settings, but apparently Apple has not coded its own app to respond to it. Next update, test size please.

You have to upgrade it in-app. Go to the "Folders" screen and you'll see "Upgrade" in the upper right corner, just below "Edit".

This looks very promising but there is a still a "flaw." Well, not really a flaw but... Why is it that any Notes, Numbers, Pages or Keynote is there not a "backup" like the Photos app (Recently Deleted)? I would consider using Notes with iOS 9 if they did what Evernote does: when you delete a note, it puts it in Trash. Just an idea.
There is a recently deleted folder in the iOS 9 notes app. It appeared as part of the folder structure - it auto clears after a certain period just like photos. It appears your wish is apple's command - use your new found power wisely.

Come on. Simple, few and local enhancements could make it so worthwhile App. Display alarm symbol next to entry when displayed as month view. Shrink month calendar to create more space at bottom for daily entries, In month view, add color dots that shows the number of entry/appointment on that day. These simple features are all available for so long in 3rd party app like Week-Cal. Seriously, not asking so much but just few basic things. Don't want to hear than buy 3rd party app. Google does improvement to it's calendar and other apps in every iteration of Android.
Even though some Apple apps are clumsy at times, they all have that Apple integration and ease of use that Apple is so famous for.
And although there were similar, more powerful apps available, I tend to use Apple's and just wait till Apple improves them.
The Notes update is much appreciated. I've tried Evernote and few others but they are either too "powerful" and feature rich for me to learn or they are pretty simple and don't sync to other devices.
I stayed with AppleWorks, Pages/Numbers, iLife/iWork, iWeb (now defunct), AppleMail, the Podcast app, Maps, iTools through MobileMe to iCloud, from infancy to maturation.
All of them seemed easier to use than anything Adobe, Google or MS ever put out.

Over time, I've become committed to Macs and OS X for the hardware quality, OS stability and support resources for my main computing setup. Which creates, well, "continuity" issues.... ....and have resolved my frustrations in being multi-platform (various reasons keep me using Windows, Macs, iOS and Android) by doing just the opposite (no disrespect to the new Apple Notes intended).... ...i.e., by avoiding most of the Apple apps with "ecosystem lock-in".... ...leaving me free to use the best devices (and any devices) for particular purposes at hand with particular budgets for those uses.
On the other hand, if you choose to live in an all Apple world, more power to you if it floats all your important boats.....
.....but my situation has me using Evernote, Word, DropBox, SugarSync, Google Photos, GMail, have uploaded my music to Google Play (never lost, no cost, and datamine me away, baby), use the Rhapsody Unradio T-Mobile throws in along with I Heart Radio, Spotify (and iTunes on Windows and Mac) - and I'm hoping Firefox will get a good version of its webkit effort on iOS soon.
It's not instantaneously seamless, but I can largely move from machine to machine and platform to platform, getting to where I was without that much effort.
Exceptions: I use Numbers and Keynote because I don't have to share any of my work on those with other OS users..... ....but still wish they were more cross platform....
P.S. I do use Dropbox. Stevo should have bought it when he had the chance!

I wish you could link to other notes. Then you could hyperlink and cross reference your notes. I'm thinking a "table of contents" for your working tasks, then tap a link to dig in to a detailed note...
I keep a lot of my writing about Apple in EverNote. Copying all that over to Notes tonight. Although I've loved using EverNote as it syncs well across my Mac and iDevices, I'm liking the cleaner layout of Notes. And of course, it seemlessly syncs through iCloud, so... goodbye EverNote.
Although it's still not on a par with Evernote's functionality, I've started using it a bit more in an effort to move away from Evernote, especially given their increasing, "Upgrade," insistences that keep appearing whenever I use the damn thing. Not that I blame them, they're a company, they need to make money, free users provide nothing to them, but I expect their messages and warnings only to increase over time (equally likely, their free services to decrease), so it'd be nice to have a platform to which I can migrate everything I keep in Evernote. Hopefully, we'll see more functionality incorporated into Notes (e.g. notebooks or embedded folders, and tags for starters).

I would be interested on your transition from Evernotes to Notes progresses, both on iOS devices and on the desktop. The "folders" function seems to duplicate the "Notebook" function in Evernote, which is key to keeping my notes organized. My biggest issue with Evernote (other than the price) is that the desktop app doesn't always automatically synchronize, so I end up with multiple conflicts that I have to sort through. Maybe you guys can update this thread with some brief comments on your experience?

This was demonstrated in the keynote too, but I'm still looking for this feature. It must be hidden somewhere. The only way i know how to make a list in it is to hit enter and type a new line just like in iOS 8.

There's one on every topic... "yeah, yeah, this is OK, but Apple needs to fix <insert something> too".
