If you want a Vega 56, you could just buy the Blackmagic eGPU Pro. That way you know you're getting something that will work. Plus it's supposed to be really quiet, which the Sonnet isn't, and you get some extra ports out of the deal.
The downside is the Blackmagic costs twice as much as the separates you listed, and you're stuck with the combo (you can't keep the chassis and update the video card). I don't know if there's something unique about the configuration of the Blackmagic that makes it cost so much more, but I can see why it might lead you to consider alternatives. In any case, it's always there as a Plan B in case you can't get a custom set to work to your satisfaction.
(In case it matters, the Sonnet power supply is actually 550w. In the body of your post you described it as 650w.)
