After a few daze of experiments, turning wrist enough to make Watch perpendicular to ground/floor made feature very reliable. Huzzah for AI! Keep on Rocking in teh Free Vorld!

I'm late to the party here, but I can confirm after experimentation that THIS is the key to making it work.  The watch face has to be perpendicular to the floor and facing you/your face.  It rarely works if the watch face is parallel to the ground (i.e. you are "talking over" the watch face).  This is likely the cue that the watch looks for to engage this function.

Cool - I'll definitely be using this more often now that I understand how to work it.
