I feel like Apple is running out of ideas with the iPhone which makes sense since it's a very mature product. This seems like a gimmick to me.
As an iPhone 15 owner I just want to let those with older phones know that I think the Dynamic Island is fantastic. It is capable of doing quite a few things. Just this morning I had used Uber and the time estimate was showing for the driver, all while I was using another app. you won’t miss the notch at all from your “old” phone. The Dynamic Island is far superior.
Using that new touch-sensitive button as a moving dial surface is novel, and might be great.
However, using the force-touch button to take a picture can cause your phone to MOVE as you shoot it.
Back in the day, when I first got an iPhone (5S) and started using its camera, I first use the option of the physical button on the side to activate the image-capture; as one would do with a full stand-alone camera. But I found that some shots had a slight motion, as the force to press the button moved the phone a bit. So, I gravitated toward the on-screen button.
Buttons on a real stand-alone cameras must be calibrated so perfectly to prevent such movement. Maybe Apple figured a calibration for this new button that will just as nice.
I don't have the steadiest hands, so always prefer to use the volume up button on attached headphones to avoid moving the camera when touching the phone. I doubt I'd use this new button ever.

I just think this will be true of most users. Sure, there will be some users that use this feature just like there are for the action button but I'm betting the vast majority of users will just use the camera the way they always have. Just like with the action button it sounds really cool on paper and in the Keynote address but in real world usage the majority of users won't use it for the intended purpose. I could be wrong but we'll see. This just reminds me of the Touch Bar on the previous generation MacBook Pro where they used a promo in the Keynote to really try and sell it and nobody bought the idea that it was as good as they said it was. Unlike with the Touch Bar though the good thing is this button doesn't remove functionality and replace it with something else so if you don't like or care for it you just don't use it.
The iPhone is a very mature product and I know Apple is looking for ways to keep it going and I just think they're running out of productive ideas. Every year it's mainly the camera they focus on and updating the SoC. The camera is important yes and I think it's the primary thing used on the iPhone around the world. I think it's actually the most popular camera in the world so it makes sense to keep working on it. I just would like to see something else done with the iPhone going forward. What, I'm not sure but every year it's just the same thing over and over again.
