Systematic racism and sexism created a society in which the people making decisions didn't represent the makeup of the populace. It isn't about "just pick the not white one" it's about "we've hired 70% white men this quarter, let's ensure that at least some of our workforce is diverse by hiring qualified individuals from minority representations."
Crying "hire based on merit" is funny because it implies that DEI hires aren't qualified for the job. If someone is hired because of a need to meet DEI quotas, it is because they are qualified and help meet the quotas. Given the issues that Apple has had with iPhone imaging and Apple Watch metrics working correctly for people of color, one could argue that Apple needs a lot more DEI, not less.
I believe your quarrel is with physics, which is notoriously resistant to DEI influence. More work needs to be done here, physics can't keep getting away with this!

Perhaps, if Apple had more people of color working on these teams, they'd have become aware of the issues before releasing devices and software that have the issues. Denise Young Smith and I share the same stance, unless of course you're somehow making it seem like her stance is entirely based on a remark she made, one based on an ideal vision of diversity and taken out of context and smeared across the internet, and one she apologized for immediately, regretted, and was clearly frustrated by. Then no, you share a different stance than Smith or I.
The comment was that you can take twelve blue eyed blonde men and put them in a room and have diversity because of their different life experiences, which is true to an extent but it has its limits. Sadly, our world is not the ideal, and we need DEI to ensure that different world views and experiences are accounted for.
To expand on her example, it is accurate that we all have different life experiences and putting several people from similar backgrounds with similar skin tones and such in the same room will still result in diverse viewpoints because they were raised differently, likely had different economic successes, and were introduced to different concepts at different points. HOWEVER, at some point their ability to introduce new ideas will reach an endpoint that can only be averted with new points of view.
For example, a group of twelve white men could easily have enough diversity to decide that local traffic laws were too relaxed, but they would likely never realize that introducing certain laws would disproportionately affect people of color. If you artificially limit your diversity by only "hiring based on merit" then you are artificially limiting the reach and capabilities of your group. You are literally eliminating the possibility of understanding every possible decision point, whether it's installing a ramp, not using certain IR soap pumps, or understanding the context behind certain words or phrases to communities beyond your own.
DEI accelerates innovation. But just like most things desired by bigoted people, eliminating DEI would be backwards, harmful, and disproportionately affect everyone that isn't the bigot.

More likely — you can thank Cook’s personal donation for giving Apple the space to stick with their DEI policy. Trump cares more about personal respect/loyalty/approval than about policy. I bet Trump values cooks contribution more because it came from him personally rather than from Apple. And having shown that personal respect, Cook will likely get more of a free pass on how he runs apple.

DEI is the kindergarten teacher realizing the same three students have been dominating the swings and refusing to let others have a turn on them at recess all week. Thursday afternoon, she gives a lesson on sharing, and Friday at recess implements the lesson by making sure that along with the first three, some other kids who want a turn get to rotate through as well.
Anti-DEI is the first three kids getting angry because a) they (incorrectly) think something that belonged exclusively to them has been taken away and b) they think the others don’t deserve a turn because they’re not as “good” at playing on the swings (ignoring the fact that by blocking access, they’ve prevented the others from the opportunity to get as “good” at playing in the swings.)
