"Faster" - 1.8, similar specs as the "Faster" now, 1999.00. Shipping very soon, under a month, though again demand will be greater than supply for some time.
"Fastest" - 1.8 single, similar specs to "Fastest" now, though I'm guessing better video card and perhaps a 2 HD raid system to justify the jump in price. Availabily will be delayed a bit more than the Faster set up because of the video card. 2699.00.
"Ultimate" will be the Dual 2.0. Apple has been keeping this category around just for this sort of thing. Will have similar specs to the "Fastest", except be the dual everyone will crave, will be available around the same time as "Fastest" but with limited quantity - and keep the ultimate price of 3799.00.
The people that *need* the speed will line up to pay for the ultimate, the people that want the speed will come here and gripe (:
One other possibility would be to have a 1.4 G4 or so single be the "Fast" - then the 1.6 G5 becomes "Faster" and 1.8 G5 "Fastest" - with the dual 2.0 G5 remaining the "Ultimate"
I've not given anything else much thought, so I won't comment on other things much. I would guess an Xserver with the new chip will be shown, available fairly soon. Other Xserver goodies announced. Monitors - the 17" is updated to be Widescreen like the 17" iMac screen, with better resolutions for them now and a lower price.

We went from thrilled to have new PowerMacs to having cut eMac prices to below $300 to make room for iMac price cuts below $700 to make room for new Cubes below $1200 and for super-duper-high-end workstation towers topping off at $1999. Fahgetaboutit. You will get an announcement for new chips/towers, shipping in a month or so, and you will like it!
1.) The Keynote will begin with the Domo-Kun "developers developers developers developers" video.
2.) Steve will then extoll the benefits of the cocoa and carbon APIs but will talk about the ability for applications written for the Win32 API to be ran inside of OS X but have OS X's native widgets. These applications will run faster on Mac hardware than on Windows hardware (but this will only be true for the highest end machines.)
3.) Steve will then shocase several new applications that are now available on OS X and talk about the platforms rapid rate of growth.
4.) He will then display Apple's complete current lineup (asside from ibooks which will continue to use a new G3 derivitive) and talk about how every Mac will incorporate PPC 970 processors. This will include consumer Macs such as the eMac and Flat screen iMac although they will only use 1.6 GHz processor. He will continue this demonstration by extoling the new features of Panther.
5.) The new towers will be unveiled using 1.6, 1.8 and dual 2GHz 970s and ranging in price from $1,200 to $3,000.
6.) New displays will be announced. They will range in size from 17", 20", 23" and 30". They will be based on a new dsiplay technology which allows it to be completely transparent plastic or glass when turned off. When on they will render an opaque, yet color image which spans from the absolute edge of the screen thus allowing multiple displays to be bumped end to end with one another. to create a large display. They will incorporate a similar extending and manuverable arm similar to the flat screen iMacs.
7.) Steve will conclude the keynote be going over a list of items which several consumers had mentioned why they wouldn't have chosen a macintosh in the past and one by one, he will quash each of them.
First will be price. Steve will counter this by saying that each of Apple's computers are less expensive then a PC from any manufacturer bearing the same (or as close as possible) configurations.
Next will be software compatibility. He will quash this argument by referencing the new technology (referred to at the beginning of this post) which allows applications written for win32 to by ran on OS X and use the Aqua API.
He'll mention the speed argument and perform a series of tests which compare the Mac to a PC, with ofcourse the Mac winning each comparison by a large margin.
He'll quash the argument that because Apple is a single source vendor, they should not be used, by announcing that IBM will be the other licensee of OS X.
8.) Steve's final announcement will be the inclusion of a new iDevice which focuses on wireless teleconferencing. This new camera will be able to be connected to a Mac or connected to a firewire hard drive and transmit over 802.11G or 3G wireless networks.
Finally, he will offer his fameous, "one more thing" and say that Apple will be announcing a new breed of Macintosh based on a Power 5 dirivitive which will be released in 3 months.
Unlike the other desktop machines that were announced, this new Mac will be regarded as a professional "workstation" intended for the professional 3D animation and film compositing markets. It will best everything available for this market, but will be priced at $15,000 fully loaded.
