Command+1 in Safari opens the first item in the bookmarks bar. Naturally you can use 2-9 as well to select bookmarks. Maybe a good reason to reduce the number of bookmarks in the bar?
Found this by accident when I was trying to close a window with command+w and ended up pressing command-2 instead. It made me think: "Wow, Dilbert.com loaded when I tried to close that window... I wonder if there's a reason behind that or did I do something crazy again? Oh no wait, it's just Safari being awesome. Ok."

Probably in all cocoa programs you can click command plus or command minus to enlarge or shrink the font size of the text.
Or you can hold Command and use the scroll wheel in your mouse.
