The 2.16ghz is certainly nice, but you definitely don't get the feeling like it's more power than you'll ever need. Running rosetta-heavy apps like MS Office still freaking blows when you work with them most of the time. Some people will never have enough power, regardless of what they have. Anyway, he now has the 2.16 (good choice, and welcome to the family!). For the regular college student, you will need something to type your papers on (Pages), something to take notes with (VoodooPad, DevonThink, MindMapPro, various other possibilities), and stuff to make your life more enjoyable and impress the girls (iLife), and something to help you manage all of your dates and still get some real academics accomplished along the way (iCal). Don't forget Safari to find the restaurants to take the dates to and Mail to write home every now and then (do not forget to do this or you are dead meat). 2.16 GHz can do that fine.
I have an older 1.5 G5 PB which I use to teach my college classes (using iMovie, iPhoto, Keynote, Pages). Some of the kids in my classes walk around with newer, more powerful things that they never really make use of (I have their bad grades to prove it). It is a matter of knowing what you need/want to do as well as what you can do and how fast you can do it.

I went through school on a machine that clocked just under 8 megaherz, not gigaherz. With 2.16 GHz should be MORE than fine! You lucky #$%&#!!
All kidding aside, the 2.16 will do you very well for some time to come.

I'm either going to major in business admin, or communications. And I plan on getting a minor in philosophy either way. However... this could all change. \
