I guess this probably answers the problem - and frankly, I'm pissed I didn't think of this sooner.
I loaded up the OS from an external hard drive (running Leopard), and lo and behold, my fans are running completely normally and automatically. So far, no freezes.
What does this mean? Motherboard, RAM, firmware, or what?
(even though the fans are running, it's still stupidly hot - is 75-80 degrees Celsius something to be afraid of?)
