Your definatley not alone in that dept. But I have to question Apples motives for in the first place leaving out so many things that would have helped it to appeal to so many more out there.
3g is understandable, not everyone has to make use of 3G but if they had at least put in things like MMS, video capture, a proper 3.5mm jack and proper bluetooth profiles it wouldnt be so heavily critisised.
I dont mind using itunes to be the sole method of transfer but cutting out all those other things will prove one step to far imo and I hope that is made blatantly obvious when it hits Europe. Ok if you dont use those things fine but you shouldnt be prevented from using them by any means.

I think the answer is a lot simpler: iChat would need a constantly open TCP/IP connection, and in order to conserve the battery the iPhone is pretty aggressive at closing off the radio connection (and thus the connection). This is fine for web browsing because opening the connection back up does not cost much, but people would get really annoyed when their friends saw them bouncing on-and-off line constantly.
I think that there is going to be need to be some general changes in networking (almost at the TCP/IP layer) to handle intermittently connected devices like this.
The most common form on IM chat it text chat, not voice chat. Voice chat could be limited to WiFi, text wouldn't necessarily need to be. IM disrupting voice calls? If there's a company that can find a loophole here it's Apple.
Maybe Apple has a new 3G iPhone in the works - one which allows users to both talk and go online at the same time. It might also have a camera on the front, facing the user, which could set the foundation for providing ichat on the iPhone.
It's likely that Apple, AT&T, and Google, are making deals behind closed doors trying to find the best way to charge for an iPhone/iChat service. To those that want to chat for free, perhaps the video/interface scrolls text/ads or GoogleAdSense when in use, probably along the bottom of the video. Those that don't want to see them can upgrade to a service plan, which removes such ads.
Then again, it's just as likely that Apple makes the service an exclusive feature of their .Mac account. Whatever the reason, I'm sure near the top of the list, for all the companies involved, none of them want to give away the kitchen sink for free.

I'm not missing the point. 90% or so (I made that up but it may as well be) of IM users use MSN and aren't likely to change to start using AIM (via iChat) no matter what the iPhone uses. iChat needs MSN support to be actually useful.

Didn't Steve Jobs himself introduce the iPhone as 1)a widescreen video iPod with touch controls, 2) a reveolutionary mobile phone, and 3) a breakthrough internet communicator. I think we are about to see that he meant more than just email. . . .
If it's a superior experience, they'll switch to iChat. How could they not? This is just part of Steve's grand plan to chip away at Windows one user at a time. Brilliant.
