Turns out, after re-installing iTunes (with the iPod Touch plugged in, and it now it works fine ? go figure.
I think I have had only one error free Touch update. All the other updates have given me problems of one sort or another. Twice I had to take it to an Apple Store just to get it to start. Looks like your good till the next update.
