Yes, you can go higher then 2 balls at once...

After a certain level it just puts all of your lives in play as balls. I think this might be a bug, but I doubt Apple is taking feedback on it.
I did it the second week I had my iPod. An hour and a half commute by train is REALLY boring! I could have kept on going too, but I was @ my stop and I couldnt pause the game. (another oversite, oh well...)

I'm pretty sure the speed is determined by the way you hit each ball with the paddle. I have made balls go really slow and really fast when I want to...

I just got 911 coming home today (there was a train delay ) that last level is TOUGH! I died with 1 more block to go before I could go to the next level. It really pissed me off I was sure I was going to get 1000... I had like 7 lives going into that level! The tiny paddle is rediculous...
I also found a way to "cheat" a little. On levels where you start with 3 balls, if you only have 1 left when you are about to finish the level (IE only 1 brick left) it is in your best intrest to purposely let the ball go. You will get 2 more lives the next round. See, the number of "extra lives" you get after you finish the round is the # of balls you have in play at that point. If you finish the level with 1 ball instead of 3 you only get 1 extra life instead of 3... get it? But it only works on levels with 3 balls...
If anyone has any idea how to take a screen shot of the iPod, I will, b/c it is impossible to make out the score with my digicam...
I got 997 once, and I haven't played it since. The thought of playing the game again up to that point, after losing right at the threshhold was rather unappealing.
Here's a tip: if you don't need to use your iPod and want to save your score, right after the ball hits the paddle, press and hold down the play button. It will turn the iPod off. When you press any button, it will resume the game right where you left off. You can't do anything else with the iPod in the meantime, though.
Only 821, but I recently impressed myself on an areoplane by effectively pausing the game whilst handling the in-flight feed by achieving a near vertical bounce at will.
