How do I correct this type/creator-esque issue?

Not seeing any issue - or anything else, for that matter.
In addition to the (broken, for me) image, you should post something like a description. Thanks!

I think the problem is that his other apps are using the Acrobat icon. But I have no idea why that would be the case.

That is very odd! You can always use the info panes to copy a correct icon back to the file/folder.

No, it's not just the icon that's amiss--Addressbook &c. don't open. They ask what to open themselves with.

Try deleting your /Library/Caches and ~/Library/Caches folders and reboot.
After a few minutes (give it 5 to be safe), you should reboot again. This allows the system to refetch the application package information among other things.

Copying icons NEVER works for me. Can you give me/unremarkable a walkthrough?
