You could try holding down the shift key while mounting so that iTunes doesn't start any automatic syncing. That may help you get further to do the ipod restore.

Try resetting the Junk Mail database. Go to Preferences-->Junk Mail and select Reset...

Do you have yourself and other email addresses entered in the Address Book. Mail should not mark those as junk.

You can also use iPhoto to sort movies. If you drop a movie in iPhoto it creates a thumbnail with a little movie camera icon on it.

When they do end up in the junk folder, do you select them and click "not junk". That's one of the ways mail learns.

You must have accidentally removed the Send button from the toolbar. Reply to an email and the resulting window, right-click in the toolbar and select "Customize Toolbar...". Drag the Send button back into position on the toolbar.
