Talking to employees the trees actually get swapped every 3-6 months or so and get taken to a sanctuary somewhere.
The fabric lighting panels are by Philips and do adjust depending on the ambient lighting. The lighting in general at this store is really nice, walked past last night they have spots angled on the trees so that the shadows created by the leaves are projected onto the pillars and floor around -

Little bit off topic but my guess on this is that placing the lightening port on the bottom of the mouse was a very deliberate design decision to stop users from charging the mouse whilst using it.
Lightening cables are more rigid and less flexible than the cables used on most wired mice, so would result in poor freedom of movement, but also place undue strain on the lightening cable which is not designed to be constantly bent and tugged on. You can bet that if the lightening port wasn't on the bottom, people would be using the mouse plugged in all the time and then blame Apple when they have to get their lightning cable replaced at the Genius Bar constantly.
