How do I shut down ALL data on my iPhone to ensure that I'm not accidentally connecting when I'm away from wifi?
I can turn off 3G, but that leaves Edge running.
I can go into Airplane mode, then turn wifi back on, but then my phone is off.
2 gripes I have about my iPhone are:
1) Lack of certainty that I'm not actually using wireless (so that I can better control it), and
2) Lack of 'one-click' tools to turn specific features on or off. I shouldn't have to drill down to do simple things like turn bluetooth or wireless on/off.

You can swipe the top status bar from the home screen or in app and turn all of the radios on or off with a tap. It does everything you want (for free) and is one of the few remaining reasons I keep my phone jailbroken.
Yeah that's it, how about when I am stuck in an airport for 4 hours and need to get some work done? Or stuck in a crappy hotel with crappy wifi and need to get some work done? Ill get my head out of my laptop if you get your out of your A$$.

Prices seem fair to me. I don't even use 1 gig and never tether. I like the pricing model. At least I can grandfather my unlimited plan, which applies to all current iPhone users and transfers to the new iPhone model.

I hated AT&T before..... now I hate them even more. I was planning on getting one of the higher end iPads with 3G .... but now..... If I even bother with it I'll only get the wifi model and use it at home. This is going to totally open up the market for Andriod and other competition to clobber AT&T's crappy ass packages.
AT&T also just made Steve Jobs look like a total lying asshole.... whether he wants to admit it or not. What in the hell were they thinking. I'm also going to start paying my AT&T bill with my AMEX card since I know they have to pay a higher percentage on each transaction.
AT&T needs to go the way of the doo doo. I got rid of my land line and refuse to use DSL because they suck there too..... iPhone is my only weakness.....
The tethering charge is complete bullshit! They're trying to make up for their way overpriced 3G internet connection for portables.... oh.... won't be buying one of those either Apple.

I use about 5-600 MB/month.
My wife uses about 100 MB/month.
Will we be able to drop our combined $60/month for data down to $25?
If so, then that's a great deal.
Otherwise, will we be able to choose different plans? $15/mo for her, $25 for me?
If not, then I end up less than thrilled. $30/mo for 2 200MB plans doesn't meet our needs, and 2 $25 plans for 4G/month leaves us paying almost as much as now for reduced caps and I may as well keep the 'unlimited'.
I was generalizing. But the plans clearly do not give you a $$ break proportional to your use.
I don't think that can be stated without going user-by-user or by using an equation (which I'm too lazy to do right now). Even you said that you "will indeed benefit under the new structure."
I checked my usage for the last several months, which I don't think included any of my "illegal" tethering and I found an anomaly which I can't explain and which will costly should it occurs again.

I commented basically saying just because you do not need tethering doesn't mean someone else doesn't. Also the consensus is that I should not have to pay twice for something. Once I pay for my data it is mine and I should be free to use my 2GB how ever I see fit. I shouldn't have to pay AT$T to use it with my laptop, iPad etc.... what do they care, if I go over I pay more. This rational only applies to a very small minority of people who used a lot of bandwidth. For the vast majority of people $30 for unlimited is unnecessary. It isn't like 3G is the only option for data on mobile devices. AT&T is working to increase the WiFi.
It isn't unnecessary. AT&T knows exactly what they are doing. You can repeat their rationale for it however many times you want but that doesn't change the point that what is being offered is more expensive per unit and also is now the only feature of the iPhone that is not available in an unlimited fashion.
You can buy unlimited voice, you can buy unlimited texting. You cannot buy unlimited data. That right there ought to raise an eyebrow. Unlimited texting and voice could theoretically overwhelm the network and limited frequency allocations as well. However as always has been the case, the march of technology makes much more possible with the same amount.
They chose those data points for a reason and the costs will show up in the bills of those under them soon enough.

Actually those utilities that have massive need are often subsidized by those who use less based off the fact they still get benefit from the infrastructure when economies of scale are factored in. Does the large farm that grows your food pay what you pay for water? No they actually pay much less even though they use much more. The benefit is considered given to you when you buy cheaper food.

Thankfully they will send you a text message when you are hitting those limits, so you can adjust your usage.

I can't imagine using more than 2GB/month on mobile devices, unless someone is addicted to youtube or streaming porn.
How do you figure? 1/2 the price for 1/5 the service has no fixed integer for an Unlimited plan.
You can say you will pay 17% less for the new 2GB plan than with the $30/month Unlimited plan, which I am sure most people will fall under.
Have you checked your AT&T usage for the last 6 months? Mine are all under 2GB now that I'm not tethering.

It's not silly at all for iPad WiFi+3G owners. It's very easy to exceed 2GB on an iPad (over 3G).
It might be very easy to exceed 2GB but so is picking up dog poop and most people won't do either.
