In addition to what everyone else has said (well, I mean the sensible stuff like the FCX 2 and new iPods), I'll go with some of the rumors about a totally new iLife-type app. I'm thinking an audio app to complement the pro Logic/Soundtrack apps. Kind of like iMovie is to Final Cut. It will do MIDI, multi-track, probably some free collection of samples, and all kinds of mixers and faders and such.
Think Secret is saying Filemaker 7 will be demoed. Guess that takes care of the new Productivity app.
Digital Hub focus will be on iLife update and the new iPods. iTunes Canada debuts (Yay!)
Other software:
Quark 6.1 will get a mention from Jobs. Can't let Adobe get too powerful.
The next MS Office will be shown.
New displays will be introduced, possibly without ADC, which never caught on the way Apple was hoping and now restricts their sales more than anything else.
One more thing: I'm going to go out on a limb and say either a PDA solution or a Phone/PDA introduced. Why? Because absolutely nobody is expecting it.

1. Updates... iPod holiday success, iTMS success (especially gift certificates), Retail Stores (announce new one in MD), and G5 sales hitting 1/2 mill. Finally, holiday success of mac sales in general (recent iBook and iMac updates).
2. Music... new iPod peripheral (aka "mini pod"). Can be used as a picture card reader and as remote to iPod (LCD, etc) also is a standalone flash MP3 player (empty CF slot(s)) $149 empty, $249 w/256MB card. iPod software update-integration with bookmarks in Safari, can download webpages to iPod, other minor improvements. New App: iTunes Pro (GarageBand sounds nice) audio mixing and cutting in a $150 application.
3. FC Express 2 (FCP 4.0 parity, $100 price drop same as GarageBand)
4. iLife updates (new iSync, new iCal, new Safari mentioned above, updates to iPhoto to integrate with iSync and iPod)
5. New G5 and displays... 17w 20w 23w 30w? $399 $799 $1199 $3299? smaller bezel, matching case. 2.0 2.2 2.6 all dual. $2099 $2399 $2999 low end very bare, 2.6 and 2.2 are the sweet-spots again.
6. One more thing... iMac update. G5 1.6 on top 20" model. New(er) gfx chips, G4 to 1.42 on 17", 1.25 on 15". $2199 1599 1299 super across the board.
20th anniv mac (20" has some kind of limited edition run with special feature)

Yeah, I think some effects-pedal-type features like echo and distortion (have you seen Amplitube?), some drum machine features. It would be fun.
GarageBand: Same crappy music to piss your parents off, now available for less! Transfer to your iPod to spread the joy!
I guess a product that would put musical creation in the hands of thousands of people on the cheap would help somehow. I'm thinking it would be a combination Logic/Soundtrack that is stripped down. I should go pick up a copy of Soundtrack however...
Full sized iPods will have built-in bluetooth. Not for file transfer, but for wireless peripherals. Wireless ear buds.. wireless remote.. etc. Supposing there will be mini iPods, they will not have this feature, hence wooing people still to dish out the ~$400 for the expensive ones.
Umm.. Also.. (I hope..) New pro mouse / keyboard? I am really wanting a scroll wheel right about now. =P (On an apple mouse, that is.)
What else... Well.. I -hope- they release a new version of Apple Works. One that is competitive with and/or better than Word/Excel.
