i have to say it's always puzzled me why it doesn't change the date. maybe it's a software support thing, like the guys on the phone need to be able to say "click on the thing that looks like a calendar with the number 17 on it" or something.
I don't buy that explanation. To update the icon they would have to constantly run an "iCal icon daemon". I'm thinking they do not want to do this for just one app and marginal effect. It would be simple if only the Dock alias changed, but iCal packages on the disk would be harder. I think special cases in Finder, etc. They do not want to go there.

MenuCalendarClock It's a menu bar time/date display integrated with iCal.
Witch is also very nice...app switching like command + tab but between all available windows of all available apps.
Here's a good compilation of free/shareware. It's got all types, categorized. Some of the Camino-specific ones are real interesting.
This list, as well as your OS X experience, is incomplete of course without QUICKSILVER.
QuickAccessCM modifies right-clicks with some neat actions.
