I just keep my headphones plugged in. I have a small box that I plug my phones and external amp into. A switch lets me select which to use without having to get under the table.

Well, I rarely use headphones with my Mac. And I don't listen to music on it late at night, so I don't turn the volume down.

I wish I could just turn that damn sound off PERMANENTLY without resorting to hacks. Oh, and that damn blinking notebook sleep light. Geez, that's annoying at night. Great idea, but again, let me turn the damn thing off already--or at least make it less bright when it's dark out.

I can only hope the MacinTels will solve these issue. But I'm not getting my hopes up too much.

There are programs which let you disable the sound. Use the power of the Internet to find them. A later revision of the iMac G5 has an ambient light sensor which dims the sleep light as needed. For a laptop, there are three options:[list=1][*]Turn the notebook away from you[*]Turn the notebook off at night[*]Install a switch to turn the light off (doable!)[/list=1]
The sounds that I have on my G4 and G3 are what sounds to me like a G chord, where there was an earlier PowerMac that sounded like it was a step lower.
The startup chime is a friendly chord to my ears. It will be interesting to hear what an intel Mac comes to have.
On my G3, with OS 9, I liked to use this programme called KaBoom. For my startup, I kept for a while the starting theme from the Twilight Zone, and then the sound of an old IBM starting up. That got tiring fast. It also would randomly moo at me, and then shut down with "Taxi". It all can be kind of corny, I suppose, but it was fun. You still heard the startup chime, of course.

They aren't getting RID of the sounds. They are just changing some of them, possibly only the Startup Chime. Most likely EVERY OTHER sound will remain exactly the same.

Muting sound before a shut down will mute the startup chime. But yeah...if you forget, it ain't the computer's fault.

Here's the car crash sound you're thinking of. It was in the early Power Macs.
The older Quadras played a "Twilight Zone" theme.
The Quadra AV had a kind of strange death chime.
This one's my favorite. BUM BUM BUM! (crash) It was in some of the 5xxx, 62xx, and 63xx Performas, and was a big, obnoxious tritone.
