Does this trick work with both generations of AirPods? Or must both pairs be of the second generation?

The Thunderbolt protocol encapsulates DisplayPort- so any display you hook up to a TB3 port is indeed using the GPU (MacBook Pros *only* have TB3 ports, so it'd be a bummer t'were that not the case). In fact because TB3 uses DP1.4 those ports can drive higher resolution displays than say the HDMI 2.0 port on the new Mac mini (5k vs. 4k).

Good question, I second it. I'd like to hear about the HiDPI (aka "retina") modes too. The tech specs at Apple.com for the current Mac mini suggest that it would be able to drive one of these displays at the max resolution, but maybe the odd aspect ratio throws off the integrated graphics? Perhaps a driver/MacOS update would enable support? Here's the relevant bit from Apple's site.

"Support for the following combination of maximum concurrent display setups:

• Up to three displays:
• Two displays with 4096-by-2304 resolution at 60Hz connected via Thunderbolt 3 plus one display with 4096-by-2160 resolution at 60Hz connected via HDMI 2.0

Although "old iPads" is somewhat subjective. Seems like you need an iPad Air or newer to do this as it requires "the latest version of iOS" and I believe the iPad Air is the oldest model to support iOS12... but yeah, I'd consider a nearly six year old model to be "old."
