The ability to change default music services came with IOS 14. I use Apple music so I haven't been able to test this, but at this point Apple has given the ability with IOS 14.

I am sure there's more to a display, but I believe brightness has to be an important one.
* I should add that I dislike the TruTone screen look (too faded-yellowish for my taste), so I always leave TruTone off on my Apple devices where it's the default. Not sure if that matters...I have had the XS Max, 11 Pro Max and now the 12 Pro Max and have seen brighter displays year over year with the 12 Pro Max being the brightest yet, and the most noticeable difference going from the XS Max to the 11 Pro Max. I am also a non professional as you are, but I have checked the brightness level a few times on my 12 Pro Max because it was so bright I thought I had turned it up accidentally. There may be something going on with your display?My GF has my previous 11 Pro Max and they are very close in brightness, with the my 12 Pro Max looking a tad brighter at the same level. Maybe swap it out and see if the actual display is faulty?Just my 2c..Just to add... I do use True Tone on my phones so maybe that does somehow make a difference? I just re-read your post as I finished my post.
