The iPod should stay a music player. Apple is only going to add features that will make it a better winner in that arena,

I agree. Keep it simple. I don't think Apple wants to take a swiss army knife approach to the iPod. And forget a 2" screen...just not very usable. They would be better off producing a 5" separate pod strictly for video.
I want a 60GB iPod (already there for 2.5" hard drives, shouldn't be much longer for 1.8") which costs $199 and is in a thinner case.
The entire front should be a thousands of colours touchscreen, so nothing can be broken or stuck.
Gigabit ethernet for 125MB/s transfers is a must.
It should come with an inbuilt 5-port ethernet hub. That would be really useful around the house.
Surround Sound on headphones was avaible from the f***ed company Aureal awhile ago, why can't this be included on the iPod?
A Video phone would be nice. Especially one whiched linked into iChat. It would function as a mobile phone for those not fortunate enough to own a Mac/iPod.
With a hard drive and screen that big, and MPEG-2 and MPEG-4 Circutry so cheap, would the ability to play DVDs and MPEG-4 ripped DVDs be that much of an ask?

Nice wish list. I think they already make this product though. It's called an iBook.
125MB/s from gigabit ethernet? not even close. try 50-60MB/s. Firewire2 would be better.
