You forgot about Farscape. In my opinion, it's the one series apart from B5 that to me made TV sci-fi feel fresh and innovative again, and the sfx were top-notch

blame Sci-Fi Network for promising Henson they'd get to finish the five season plot,
then pulling the rug out as season four wrapped shooting
plenty of Save Farscape campaign websites out there to sign petitions on,
some with chat transcripts from the producers detailing the skinny
echoes of late 60's Paramount, except the production values and ratings were much higher for Farscape

But it is "to be continued" because they are gonna finish it one way or the other. They will find a way.
I think you've got to be carefull about what you ask for, because you just may get it. Really, TNG was great around seasons 3-6, but do you really want to see more crap like "transporter psychosis"?
I think that's a problem with more than a few of these shows-- they lasted longer than they should have. I was a BIG B5 fan in the begining, but the resolution of the Shadow War was a pretty big let down ("Leave us alone!" "OK." WTF?).
The X-Files was another show that went longer than it should have. The series probably should have stopped soon after the movie. I have to admit, though that one of my favorite episodes was in the last season. The plot involved a little kid that could influence people into believing imaginary things were real (like a bug living in their stomach). The resolution of that episode was classic X-Files.
As for my choices, I'll limit the field to shows which either are (a) still in production, and haven't reached the "point of no return", or (b) canceled ahead of their time. Within those constraints, I'd have to say there are two shows that really stand out in my mind:
1) Space Above and Beyond
2) Stargate
Of those two, I'll choose Stargate, probably simply becuase it's currently in production and I'm caught up in it...
(I would have liked to have included Farscape in the list, but I've been watching SciFi's after midnight reruns lately, and I have to say that I liked the show much better in the 2nd and 3rd seasons, as well as the last half of the 1st. If the show continued, I'm afraid it would have "jumped the shark" sometime in the fifth season...)
