You totally missed the point that sniffers are installed in all Apple stores, and most probably all other stores, to activate ventilation to counter body odour. It is the ones in this store that are installed too high to work optimally.It really helps to read the article first.

The sensors don't detect CO, they detect CO2. It's very common in new HVAC systems for large areas and as correctly stated they control the level of fresh air. It's not for diagnostics, its for energy savings. Otherwise they would have to design the system to continuously bring in fresh air corresponding to a exchange rate of the maximum occupancy, using additional energy to heat or cool the air.
Cant control everyone that walks into a store and Apple making efforts to make the experience more pleasant is a big win. Not to point fingers but there are some ethnicity's that do not use deodorant and love high tech. I dont recall it ever getting that bad so I can assume the odor sniffers are working!
As for CO if it gets too high then consumers will get tired. Add some oxygen to keep every levels up and that may lead to more spending.
