This is an impressive accomplishment for a product that has been out for a week, and to neither see nor acknowledge this blows my mind.
We have no idea what else could be done in the future. Nefarious users could figure out was to have it bypass sending or receiving data from Apple altogether, which could make this a very useful tool for certain people.
While I doubt we'll see many doing this, that's not the point for even one person using these in an unintended way for evil is worth protecting against, so I hope Apple can push a way to protect the HW soon.
The AirTag receives nothing from Apple - it only receives data from Apple devices (probably only the device it is paired with.) -

There is this page on the Kensington site. Does show buy option for 12.9” iPad Pro 2018+. No mention it’s compatible in the product information. So maybe it is. Maybe it isn’t.

During the setup of a new device or wiped/reset device, the option to turn True Tone on/off is presented to the user. The user decides if it is on or off. -

This means Atmos 3D position metadata is completely lost. AppleTV does not support true passthrough, so there is no way to preserve Atmos metadata.
It is always possible the new AppleTV could fix this or take advantage of eARC to partially fix it in specific scenarios, but there is as yet no evidence of any fix for this forthcoming. Because of this, Apple is really at the bottom of the barrel in terms of sound quality as it can't handle proper Atmos unlike every other major media player.
What you state might be true if you connect the AppleTV directly to a TV, and try to take the audio from a TV to some surround sound AMP/processor, but if you connect the AppleTV 4K (current, even) directly to a Dolby Atmos compatible receiver, it will pass Dolby Atmos (my receiver shows it is receiving/processing Dolby Atmos).
Even my Sony Dolby Atmos compatible sound bar shows Dolby Atmos coming from the current Apple TV 4K.
