Steveinator will definitely talk about iPhone-ness, but I think it is way to early for a new release, and certainly way to early for 3G. If anything it would be SDK and more memory, but I think that too will wait.
MWSF should focus on Mac this year, with the exception of movie rentals + iTunes update + Apple TV update of some kind (could be software update or hardware update).

Actually I was thinking that iPhoe would get a flash bump around the time the SDK debuts. The question is, is there a media event around that time?

That seems to be about right. It is simply the issue of a lot of Mac hardware being due for updates. Like in years past though I expect to see releases of new hardware staged in the first few weeks of the new years. Thus sometime after MWSF we should hear about new servers and such. Me feeling is that MWSF will be one of the bigger Mac events of recent memory.
Mac Pro update (although it could wait till NAB -- BluRay at NAB (MAYBE), but NOT at MWSF)
No new cinema displays (I think this will wait)
You had me all the way until this point. I think your assessment of Mac Pros waiting all the way until April is wrong. Mac Pros will get updated very soon. I don't know if they will be unveiled at Macworld or not. If they are to be unveiled at Macworld then they will probably be accompanied by a new enclosure. Otherwise by February at the absolute latest. Same with the Apple Cinema Displays too.
Edit: MacBidoobie said Mac Pros at Macworld with 10.5.2. Sounds sensible to me.
how soon after jan 15 when the new products are released will they be available to buy at a bestbuy apple store? hopefully the same day!!
If Apples previous practice continues they will likely have an array of delivery dates. Items with older technology {mini} might be available right after the keynote. Other things might be a whole month away, for example an ultra mobile PC. It all depends on the ability to ramp production and that in part depends on the suppliers.
It also depends on the focus of this Mac World. If the entire program is dedicated to Macs there could be a lot of new hardware in the pipeline immediately. If Apple gets wrapped up in iTunes for Movies and releases hardware to support that then there might not be a huge number of new Macs debuted. If the show is mixed in focus don't expect updates to pro hardware.

iSight built-in (optionally without -$99)
Not likely. Apple doesn't offer that kind of customization, and for stuff like that, in my opinion, rightly so.
Cutesy Mac/PC style introduction (maybe)
Holiday sales and Market share stats ("Phenomenal 1st quarter")
"Today we're here to talk about Mac... but first, iPod + iTunes"
Mac OS X
Graph of Leopard adoption ("fastest adoption than any other OS we've shipped!")
Mac market share and holiday sales ("Macs on the rise, wise crack about Windows")
Stats on iWork + iLife '08 sales
iPod + iTunes
iPod Market share/Holiday Sales
Movie Rental (+ Fox)
New version of iTunes/FrontRow
Apple TV software update for sure, Apple TV hardware update maybe
No new iPods
iPhone
Excellent adoption, excellent holiday sales
"Best received product ever shipped"
SDK information (not necessarily SDK release)
No new iPhone.
Mac
Ultra-thin mobile Mac (this will take up most of the keynote with info and demos)
New mac ad for the mobile mac
New MacBooks/MacBook Pros
Mac Pro update (although it could wait till NAB -- BluRay at NAB (MAYBE), but NOT at MWSF)
No new cinema displays (I think this will wait)
